Sweet Lime Veggie Noodles

Try this delicious and healthy noodle dish. Packed with fresh veggies, spices and extra protein from Almond Butter.

INGREDIENTS
2 cups organic brown rice noodles, cooked
1 head of broccoli, cut into orets
1 cup purple cabbage, shredded
4 medium carrots, julienned or sliced
2 tablespoons extra virgin cold pressed coconut oil 3 teaspoons chili powder
1 teaspoon turmeric
A pinch of salt
A pinch of pepper
1/4 cup almond butter
1/4 cup water
Juice from 2 limes

TOPPINGS
Scallions & Cilantro

DIRECTIONS
Cook rice noodles according to the package directions. Place veggies in a frying pan with coconut oil on medium heat. Add seasonings, mix well and cover with a lid. Once the veggies are cooked, add almond butter and 1⁄4 cup of water. Mix well. Add lime juice and remove from heat. Mix noodles with seasoned veggies and almond sauce. Garnish with fresh scallions and cilantro. Serves 3-4.
