Rosemary-Ranch Chicken Brochettes
From the Kitchen of Chef, Charles Childers, Nature’s Oasis
Try these yummy and quick chicken brochettes. You can let the chicken marinate in the homemade rosemary ranch dressing while you are preparing a salad and sides and then they only take 8-12 minutes on the grill.
1/2 cup olive oil
1/2 cup homemade ranch dressing (see below)
3 tablespoons Worcestershire sauce
1 tablespoon minced rosemary
2 teaspoons salt
1 teaspoon lemon juice
1 teaspoon white vinegar
1/2 teaspoon black pepper
1 tablespoon sugar
5 boneless, skinless chicken breasts, cut into 1” cubes
Homemade Ranch Dressing
Combine and mix until smooth:
1 cup mayonnaise
1/2 cup sour cream
1 1/2 cups plain yogurt
1/2 teaspoon each dried chives, parsley & dill
1/4 teaspoon each garlic and onion powder
1/8 teaspoon each salt and black pepper
Combine all ingredients, except chicken, in a bowl. Let sit 10 minutes to combine flavors. Add chicken, toss, cover and place in refrigerator for half an hour (or more). If using bamboo or wooden skewers, soak them in water for at least half an hour to reduce the chance of them burning. Preheat the grill for medium-high heat. Thread the chicken on soaked skewers and discard the marinade. Lightly oil the grill and cook brochettes for 8-12 minutes, or until chicken is 165 degrees for 15 continuous seconds.
