Boneless Pork Chop with Blueberry Sauce

Try this delicious healthy protein. Ground flax seeds coat the pork chops and add Omega-3 essential fatty acids and extra fiber. The blueberry sauce adds an antioxidant punch of goodness!

4 boneless pork chops
1 tablespoon ghee
1/3 cup flax seed
1 tablespoon mustard seed
1 teaspoon garlic powder
2 teaspoons ground ginger
1 teaspoon onion powder

DIRECTIONS
Season pork chops with Himalayan or Celtic sea salt. Grind flax seeds and mix with other spices until well combined. Put dry mix on a plate and press the pork chops into the mixture, evenly coating on all sides. Melt ghee in an oven-proof skillet over medium-high heat. Sear pork chops until coating is golden brown, about 1-2 minutes per side. Place in the oven and bake at 400° for 12-18 minutes (depending on thickness of the chop).

BLUEBERRY SAUCE:
1/2 cup fresh or frozen blueberries 1/3 cup balsamic vinegar
1/2 tablespoon honey
2 cloves minced garlic
Fresh rosemary

DIRECTIONS
Place ingredients in a saucepan over medium-high heat. Bring to a boil and allow sauce to reduce for 10-15 minutes. When pork chops are ready, spoon the sauce over the top and garnish with fresh rosemary.
