Vanilla Chia Pudding Parfait

This dish is lovely for breakfast, post workout snack or even dessert. Fancy it up by layering it as a parfait. Delicious dates, coconut water, cashews and blackberries, yum!
1/2 cup dark or white chia seeds
3 cups coconut water (or regular water which is less sweet)
2 cups cashews
6-8 soft pitted dates
2 cups water
1 teaspoon vanilla
1/2 teaspoon salt
Fresh peaches and blackberries for layering Pour dry chia seeds in a large mixing bowl lled with 3 cups of coconut water. Stir constantly for the rst 5 minutes allowing seeds to form a uniform gelatinous cover. Let stand for 15 minutes, stirring occasionally. In a Vita Mix or high-speed blender, place cashews, dates, 1 banana, vanilla, salt and 2 cups of water. Blend on high till it is super silky smooth. Add cashew mixture to the chia mixture and stir. Adjust sweetness to taste.
Garnish with fresh peaches and blackberries (or your favorite fruit). For parfait, layer fruit in bottom of glass, then scoop 1/3 cup chia pudding. Next layer your other fruit. Keep alternating until you reach the top. This pudding will keep in a sealed container in fridge for up to one week. Serves 6.
