This dish is lovely for breakfast, post workout snack or even dessert. Fancy it up by layering it as a parfait. Delicious dates, coconut water, cashews and blackberries, yum!

1/2 cup dark or white chia seeds
3 cups coconut water (or regular water which is less sweet)
2 cups cashews
6-8 soft pitted dates
2 cups water
1 banana
1 teaspoon vanilla
1/2 teaspoon salt

Fresh peaches and blackberries for layering Pour dry chia seeds in a large mixing bowl lled with 3 cups of coconut water. Stir constantly for the rst 5 minutes allowing seeds to form a uniform gelatinous cover. Let stand for 15 minutes, stirring occasionally. In a Vita Mix or high-speed blender, place cashews, dates, 1 banana, vanilla, salt and 2 cups of water. Blend on high till it is super silky smooth. Add cashew mixture to the chia mixture and stir.
